The dough for our pizza is a wild yeast sourdough made with Italian and American 00 and whole grain rye flours. Every day the dough grows older as we build and mature it. The Pizza changes daily as weather and nature plays its role. In the traditional Italian fashion we bake our pizza in our wood fired oven hot and fast for a crust that is crispy, soft and chewy.
